Agregar otro pa\u00f1o de cocina peque\u00f1o y presionar con un plato pesado o un libro grande.<\/li>\n<li>Mientras tanto, lavar y secar todos los productos. Quitar los tallos de los champi\u00f1ones y c\u00f3rtalos en rodajas finas.<\/li>\n<li>Recorte el calabac\u00edn y c\u00f3rtelo en rodajas finas, luego c\u00f3rtelo por la mitad, en forma transversal, en medias lunas.<\/li>\n<li>Pelar las zanahorias y luego c\u00f3rtelas a lo largo en tiras. Girar hasta llegar al n\u00facleo.<\/li>\n<li>Recorte y pica las cebollines, divide las claras de las verdes. Revolver hasta que quede de una consistencia suave.<\/li>\n<li>Desenvolver el tofu prensado de la toalla y desmoronar en un taz\u00f3n grande.<\/li>\n<li>En una olla peque\u00f1a, combinar el arroz con 1 1\u20444 taza de agua. Llevar a ebullici\u00f3n y luego reducir el fuego a bajo. Cocinar hasta que el arroz est\u00e9 tierno, unos 15 minutos, luego apagar el fuego y mantenerlo tapado.<\/li>\n<li>Calentar un chorrito de aceite de oliva en una sart\u00e9n mediana o wok. Agregar las zanahorias y sazonar con sal y pimienta. Cocinar hasta que est\u00e9n tiernos, de 4 a 5 minutos, y luego transferir a otro taz\u00f3n.<br \/>Agregar el calabac\u00edn y un poco de aceite de oliva. Sazonar con sal y pimienta y cocinar hasta que est\u00e9n tiernas. Transferir al mismo taz\u00f3n que las tiras de zanahoria cocidas.<\/li>\n<li>Agregar los champi\u00f1ones picados con otro chorrito de aceite de oliva. Cocinar de 3 a 5 minutos o hasta que est\u00e9 suave. Sazonar con sal y pimienta y transferir a un taz\u00f3n con verduras.<\/li>\n<li>Calentar otro chorrito de aceite de oliva en una sart\u00e9n, agregar el tofu desmenuzado y cocinar hasta que est\u00e9 ligeramente dorado. Agregar sal y pimienta y luego agregar la mezcla de salsa de soja Sriracha. Cocinar otros 5 a 10 minutos a fuego medio hasta que el tofu se desmorone y se seque. Agregar los cebollines y mezclar.<\/li>\n<li>Mientras tanto, mezclar las cebollines, el vinagre de vino blanco y una pizca de sal en un taz\u00f3n peque\u00f1o.<\/li>\n<li>Esponjar el arroz y colocarlo en un bol taz\u00f3n.
