Jing Si instant mixes are made from natural grains, are full of nutrition, and good for your stomach. Mooncakes prepared from these instant mixes have a wonderfully refreshing taste, and such pastries are very simple to make, as no baking is involved.
Ingredients
CRUST (1 portion = 120 g):
60 g of Jing Si multigrain instant mix
10 g of cooking oil
25 g of water or plum juice
FILLING:
10 g of Jing Si red bean powder
18 g of Jing Si cocoa flavor instant mix
10 g of crushed walnuts
20 g of hot water

Directions
- Mix the ingredients for the crust into dough, and divide into portions.
- Prepare the filling by combining red bean instant powder and hot water first, then adding the crushed walnuts.
- Prepare the mooncake mold, by greasing the interior with oil. Insert filling into the portions of dough, then place into the mold with the opening facing up. Close the mold to shape the cakes and remove once done.
Tips
You can use various flavors of Jing Si instant mix for the crust.
You can also make the filling from mashed red or green beans.
Do not refrigerate the mooncakes since this will harden the crust.
Best to eat within 3-4 days.
